Cut the stems from the artichokes so they can stand upright.
Optionally remove the hard, outer leaves.
Cut off the top (about 2 cm) of the artichokes so the tips are gone.
Sprinkle with lemon juice to prevent browning.
Bring a large pot of salted water to a boil.
Place the artichokes in the water and cook or steam them for 20–30 minutes until the leaves come off easily.
Drain and allow to cool.
Halve the artichokes and brush them with olive oil, season with salt and pepper.
Grill for 5–7 minutes in the airfryer at 180°C.
Mix mayonnaise or yogurt with mustard, finely chopped garlic and lemon juice.
Season the sauce with salt and pepper.
Place the artichokes on a plate, sprinkle with fresh parsley and serve with the sauce.
