• 125 g baking butter
• 160 ml almond milk
• 2 eggs
• 110 g sugar
• 1 packet of vanilla sugar
• A pinch of salt
• 250 g self-rising flour
• A handful of (milk) chocolate chips
Melt the butter using a bain-marie by placing it in a heatproof bowl over a pan of hot water. Then, let it cool down. In a large bowl, whisk the eggs together with the sugar, vanilla sugar, and a pinch of salt until the mixture becomes light and airy. Sift the self-rising flour over the mixture and stir well to prevent lumps from forming. Next, add the melted and cooled butter along with the almond milk, mixing everything into a smooth batter. Gently fold in the chocolate chips with a spatula to evenly distribute them. Lightly grease the waffle iron with butter or oil to prevent sticking. Spoon a generous tablespoon of batter into the waffle iron and bake for about 2 minutes, until golden brown and cooked through.
