Potato-garlic mini pancakes from the WaffleTastic®

Ingredients

  • 550 gr potatoes (floury)

  • 5 eggs

  • 100 gr patent flour

  • Parsley (finely chopped)

  • Chives (finely chopped)

  • Chervil (finely chopped)

  • Pezo

Preparation

  • Peel the potatoes and cut into equal pieces.
  • Boil the potatoes in salted water until tender.
  • Drain the potatoes and mash them with a potato masher.
  • Weigh 500 grams of mashed potatoes.
  • Using a whisk, mix the mashed potatoes with the eggs and flour to form a smooth batter.
  • Stir the chopped green herbs into the batter and season with salt and pepper.
  • Get the waffle iron hot and grease with oil.
  • Fill the dimples three-quarters full with the batter and cook on setting 4-5 (middle) for +/- 3 minutes until nicely golden brown. 

     

Tips

Tip: Serve as an ‘amuse bouche’ for example with a tuft of sour cream and caviar or salmon eggs. Edible flower or herb for decoration
