Breakfast Quesadilla with Egg, Avocado, and Tomato

Ingredients

 

  • 8 eggs
  • 6 tomatoes
  • 4 avocados
  • Chives (finely chopped)
  • Pezo (salt and pepper)
  • 8 large tortillas

Preparation

  • Scramble the eggs in a non-stick pan, seasoning with salt, pepper, and Italian herbs.
  • Slice the tomatoes and avocados into very thin slices. Chop the chives finely.
  • Place a tortilla on a plate and cover half of it with scrambled eggs, avocado, tomatoes, and chives.
  • Season with Pezo (salt and pepper) and extra Italian herbs. Fold the tortilla (rectangular) and ensure it’s not too thick, so it fits perfectly into the waffle iron.
  • Preheat the waffle iron and grease it with oil.
  • Place one tortilla in each waffle compartment and cook on setting 4-5 (medium heat) for about 3 minutes until golden brown. Cut each tortilla into pieces.
