Savory madeleine with the WaffleTastic®

Ingredients

  • 2 cobs of pre-cooked corn
  • 240 ml whole milk
  • 2 eggs
  • 1 tbsp sugar
  • 60 g fine corn flour
  • 4 tbsp flour
  • 1 tbsp baking powder
  • A pinch of salt
  • 20 g melted, salted butter

Preparation

  • Mash (or blend) the pre-cooked corn together with the milk. 
  • Beat the eggs and sugar until fluffy. 
  • Add the melted butter to the mixture and mix in the mashed corn. 
  • Then mix in the baking powder, cornmeal, salt and flour to make a smooth batter.
  • Pour the batter into a piping bag and let it rest overnight.
  • Heat the WaffleTastic® with the madeleine baking tray, grease it with baking spray or butter and fill the madeleine moulds completely. 
  • Close the WaffleTastic® and bake the madeleines for about a few minutes until the desired colour. 
  • After 1 minute, turn over to ensure even cooking.

Tips

Tip 1: Serve the savoury madeleines as a snack with feta cheese and a dip of peas, mint and pistachio

Tip 2: Use the madeleines as part of a main course instead of a traditional potato preparation

Tip 3: Perfect as a savoury snack for the kids. 

Tip 4: Flavour the madeleine base with Moroccan spices, or make an Italian version by adding chopped olives, sundried tomatoes and basil.
