Pistachio ice cream with chocolate chunks

Ingredients

  • 250 ml milk
  • 250 ml cream
  • 100 g sugar
  • 4 egg yolks
  • 100 g pistachio paste
  • 50 g dark chocolate (chopped)

Preparation

  • Freeze the ice cream bowl 12 hours in advance (if required).
  • Heat milk and cream until just below boiling.
  • Whisk egg yolks with sugar until light. Gradually add the warm milk mixture while stirring.
  • Thicken on low heat (about 82°C). Stir in pistachio paste until smooth.
  • Cool and refrigerate for 4 hours.
  • Pour into the ice cream maker and churn for 20-40 minutes. Add chocolate in the last 5 minutes.
  • Serve immediately or freeze for firmer texture.
