Steak tartare with Buñuelos Rosette and truffle mayonnaise

Ingredients

  • Beef tenderloin
  • Shallot
  • Truffle mayonnaise
  • Cress
  • Arugula
  • Capers
  • Buñuelos Rosette

Preparation

  • Finely chop the steak into tartare.
  • Finely chop the shallot.
  • Mix the steak tartare with the shallot and a little truffle mayonnaise.
  • Place the mixture into a Plate-it ring, press down gently, and carefully remove the rosette from the deep fryer.
  • Garnish with cress, arugula, capers, and a Plate-it Buñuelos Rosette.
  • Finish by adding small dollops of truffle mayonnaise using a Plate-it spray bottle.
