2. Stuffed ‘Jack-o’-Lantern’ Peppers

These cheerful and flavorful Jack-o'-Lantern peppers are a fantastic way to brighten up your Halloween meal. Prepare them quickly in our Snacktastic®.

Ingredients (for 4 people):

  • 4 orange bell peppers (medium-sized)
  • 250 grams ground beef
  • 1 cup (200 grams) uncooked rice
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 small can tomato paste (70 grams)
  • 1 can (400 grams) diced tomatoes
  • 1 teaspoon cumin powder
  • 1 teaspoon paprika powder
  • 1/2 teaspoon chili powder (optional, for extra kick)
  • 100 grams grated cheese (cheddar or mozzarella)
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh herbs (such as parsley or coriander) for garnish

Preparation:

Prepare the Rice:

  • Cook the rice according to package instructions. Set aside when ready.

Prepare the Peppers:

  • Cut the tops off the peppers and remove the seeds and white membranes. Set the peppers aside.

Make the Filling:

  • Heat the olive oil in a large pan over medium heat. Add the chopped onion and minced garlic and cook until soft, about 3-4 minutes.
  • Add the ground beef and cook until browned. Be sure to break up the meat into small pieces as it cooks.
  • Add the tomato paste, diced tomatoes, cumin powder, paprika powder, chili powder (if using), salt, and pepper. Let the mixture simmer for 5-7 minutes until the flavors are well combined and the sauce is slightly thickened.
  • Mix the cooked rice into the meat mixture and stir well.

Fill the Peppers:

  • Fill the peppers with the meat and rice mixture. Press down gently to ensure they are well filled.
  • Sprinkle the grated cheese over the stuffed peppers.

Prepare the Peppers in the SnackTastic®:

  • Carefully place the stuffed peppers in the basket of the SnackTastic®. Make sure they stand upright and don't touch each other for even cooking.
  • Set the SnackTastic® to 190°C (375°F) and bake the peppers for 15-20 minutes, or until the peppers are soft and the cheese is golden and bubbly. Check occasionally to prevent over-browning.

Garnish and Serve:

  • Remove the peppers from the SnackTastic® and let them cool for a few minutes. Garnish with fresh herbs for an extra touch.
