Croque Mozzarella

Ingredients

  • Buffalo mozzarella
  • Tomatoes
  • Bread
  • Parma ham
  • Lettuce
  • Alfalfa
  • Green pesto
    • 100 g parmigiano
    • 100 g pecorino
    • 2 bunches of basil
    • 2 garlic cloves
  • Olive oil (20 % virgin - 80 % mild) (use more virgin oil if you prefer a stronger pesto)
  • Salt and pepper

Preparation

Preparation of Green Pesto:
Finely chop the parmigiano and pecorino in the FRITEL chopper.
Add half of the oil, half of the basil, half of the garlic, and some salt and pepper.
Finely chop the mixture.
Taste it and adjust the flavor with the remaining basil and garlic.
Chop the mixture finely again.
Then add the remaining oil until you achieve a thick consistency. The pesto should not be too runny.
Let the pesto rest for a few hours in the refrigerator.

Preparation of Croque Mozzarella:
Let the buffalo mozzarella drain well and slice it into thin pieces.
Cut the tomatoes into thin slices.
Preheat your FRITEL SW 1450.
Spread a generous layer of pesto on two slices of toast bread.
Top the bottom slice with Parma ham, slices of mozzarella, and tomato.
Place the top slice on top and press firmly.
Brush the plates of the SW 1450 with some melted butter.
Place the croque on the grill plate and close the lid.
Grill the croque for a short time; otherwise, the cheese will ooze out. Add the lettuce and alfalfa before serving.
