Ingredients

  • 2 egg yolks
  • 1 tbsp sharp mustard
  • 2,5 dl peanut oil
  • 2 tbsp white wine vinegar of lemon juice
  • Salt and pepper

Preparation

Put the egg yolks and mustard, together with a pinch of pepper and salt, in the measuring cup.
Mix everything smoothly with the hand blender.
Add a portion of the oil in a fine jet while continuing to mix.
Pull the hand blender up and down in a smooth motion to draw air through the preparation.
When the sauce thickens, add the rest of the oil in a slightly wider stream and
continue to mix as described above.
When all the oil has been absorbed,
continue to mix vigorously for about 30 seconds.
Add the vinegar or lemon juice.
Taste, season with salt and pepper to taste.
