Mediterranean pasta with roasted vegetables and parma ham

Ingredients

  • 350 g pasta (shells or another coarse pasta variety)
  • 2 red bell peppers
  • 1 yellow bell pepper
  • 1 zucchini
  • 150 g mushrooms
  • 10 cherry tomatoes
  • 2 cloves of garlic
  • 4 slices of Parma ham
  • 50 g Parmesan cheese (shaved)
  • 2 sprigs of fresh rosemary
  • 3 tbsp olive oil
  • 1 tsp dried oregano
  • Salt and pepper to taste

Preparation

Cut the bell peppers, zucchini, and mushrooms into pieces.
Halve the cherry tomatoes and finely chop the garlic.
Heat a pan with olive oil over medium heat.
Sauté the vegetables with the garlic, oregano, salt, and pepper until soft and slightly caramelized.
Fill the FRITEL Rice and Pasta Cooker with water according to the appliance instructions.
Add the pasta and cook until al dente.
Drain and reserve a cup of cooking water.
Mix the cooked pasta with the sautéed vegetables in a large bowl.
Add a splash of cooking water if the pasta is too dry.
Tear the Parma ham into pieces and add it to the pasta.
Sprinkle with Parmesan cheese and garnish with fresh rosemary.
Serve immediately and enjoy this delicious Mediterranean pasta, easily made with the FRITEL Rice and Pasta Cooker!
