Preparation

Cut the puff pastry into 5-6 strips +/- 25cm long and +/- 5cm wide.

Cut the apples in half, carefully removing the core. Cut into thin slices.

Put the apple slices in a pot with cold water and lemon juice. Bring to the boil for a while until the apple slices are supple.

Spread the puff pastry strips with jam.

Spread the apple slices horizontally (with a small overlap) side by side along the whole length on the top of the puff pastry (with the skin of the apple facing up). There should be room left to fold over the rest of the puff pastry.

Sprinkle some cinnamon powder over the apple slices.

Fold the free part of the puff pastry over the apple slices as if you were tucking them into bed. Then gently roll the strip into a rose and place in a silicone muffin tin.

Repeat until all ingredients are used up.

Place the florets in the hot-air fryer at 170°C for 15 minutes.

Serve hot, lukewarm or cold with icing sugar as a finishing touch.
