How do I melt solid fat in a Turbo SF or FryTastic® deep fryer?

Frying with solid fat: the secret formula for authentic Belgian fries When it comes to real Belgian fries, there are plenty of tastes and opinions, but one thing is sure: if you want the crispiest fries, choose solid fat. What's more, frying with solid fat is making a comeback among true fry lovers. Curious how to do this safely and correctly? Read on and discover why a FRITEL fryer with fat melting function is the smartest choice for every fry fan!

Why solid fat (beef fat or vegetable)?

Solid fat, such as beef dripping or vegetable fat, has been the secret weapon of Belgian fry culture for years. It:

  • gives a crispy crust and soft inside
  • provides that typical smell and taste of artisanal fries
  • is often cheaper and more stable than frying oil
  • produces less unwanted odors with repeated use

In short: if you want to fry like a pro, you do it with solid fat.

Only with the right fryer: choose a fat melting setting

Important: frying with solid fat is not something you do with just any fryer. You need a device with a fat melting function. FRITEL is the only manufacturer in Europe offering fryers with a patented fat melting setting, available in the FRITEL Turbo SF® and FryTastic® models.

Why is this so important?

  • It prevents overheating or flames during melting
  • It protects your heating element and thermostat
  • Your frying fat becomes liquid gradually and safely

How to fry safely with solid fat – step by step

First use

  1. Cut the fat into pieces Never place a whole block of fat on the heating element. Spread the fat between and on top of the element.
  2. Use the fat melting setting Set the thermostat to the fat melt symbol. Wait until the fat is completely liquid and transparent.
  3. Ready to fry!

Turn the thermostat to 180°C and fry your fries until golden brown and crispy.

Reuse

  1. Has the fat solidified? Carefully poke holes with a wooden spoon, never metal.
  2. Let the fat melt again using the fat melting setting.
  3. Enjoy perfect fries again without loss of flavor.

When to replace frying fat?

Is your solid fat dark, syrupy, or does it smell strange? Then it's time to replace it.

How to do that:

  1. Melt the fat again using the fat melting setting.
  2. Turn off the fryer and let the fat cool slightly (do not let it solidify).
  3. Pour into an empty plastic bottle or box and bring to the recycling center.
  4. Clean the tub, basket, and element with warm water and soap (or in the dishwasher, except for the control panel).

Then start again with fresh fat blocks as you did for first use.
