Blinis with smoked salmon, sour cream and dill

Ingredients

Blinis: 

125 g buckwheat flour
75 g flour
 5 g dried yeast
 ½ tsp salt
 250 ml lukewarm milk
 2 eggs

 

Topping :

125 g sour cream
200 g smoked salmon 
Fresh dill and/or chives
Black pepper
 

Extra :

Oil or baking spray

Preparation

  • Mix the buckwheat flour, flour, yeast and salt in a large bowl. Then add the milk and egg yolks and whisk together to a smooth batter. Cover the bowl and let the batter rise in a warm place for 1 hour.
  • Beat the egg whites until stiff. Carefully spoon the whipped egg whites into the batter.
  • Heat the waffle maker and lightly grease the baking plates with a little oil or baking spray.
  • Spread the batter over the blini baking plate and bake until golden brown.
  • Let the blinis cool briefly and serve with a garnish of sour cream, smoked salmon, a pinch of black pepper and fresh herbs.
