Stuffed 'Jack-o'-Lantern' Bell peppers

Ingredients

For 4 people:
o 4 orange bell peppers (medium size)
o 250 grams of minced beef
o 1 cup (200 grams) uncooked rice
o 1 onion, chopped
o 2 cloves of garlic, minced
o 1 can of tomato paste (70 grams)
o 1 can (400 grams) of diced tomatoes
o 1 teaspoon cumin powder
o 1 teaspoon paprika powder
o 1/2 teaspoon chili powder (optional, for extra spice)
o 100 grams of grated cheese (cheddar or mozzarella)
o 1 tablespoon olive oil
o Salt and pepper to taste
o Fresh herbs (such as parsley or cilantro) for garnish

Preparation

Prepare the Rice:
- Cook the rice according to the instructions on the package. Set aside when ready.

Prepare the Peppers:
- Cut off the top of the peppers and remove the seeds and white membranes. Set the peppers aside.

Make the Stuffing:
- Heat the olive oil in a large pan over medium-high heat. Add the chopped onion and minced garlic and sauté until soft, about 3-4 minutes.
- Add the minced beef and fry until browned. Be sure to break the minced meat into small pieces while frying.
- Add the tomato paste, diced tomatoes, cumin powder, paprika, chili powder (if using), salt and pepper. Simmer the mixture for 5-7 minutes until the flavors are well blended and the sauce has thickened slightly.
- Mix the cooked rice into the mince mixture and stir well.

Fill the Peppers:
- Fill the peppers with the meat and rice mixture. Lightly press the mixture to make sure they are well filled.
- Sprinkle the grated cheese over the stuffed peppers.

Prepare the Peppers in the SnackTastic:
- Carefully place the stuffed peppers in the basket of the SnackTastic. Make sure they are upright and not lying against each other to ensure even cooking.
- Set the SnackTastic to 190°C (375°F) and bake the peppers for 15-20 minutes, or until the peppers are tender and the cheese is golden brown and bubbling. Check occasionally to prevent them from getting too dark.

Garnish and Serve:
- Remove the peppers from the SnackTastic and let them cool for a few minutes. Garnish with fresh herbs for an extra touch.
