Peel the potatoes and boil them in lightly salted water for 20 minutes until tender. Mash them (without butter or milk) and season with salt, pepper and nutmeg. Put the flour in a bowl, make a well in it, dissolve the yeast in a little lukewarm beer and pour into the well. Mix slowly. Add the rest of the beer, the beaten egg and the spices and mix well. Add 400 g of mashed potatoes and mix well. Bake small waffles of this in a greased waffle iron.
Make horseradish mayonnaise by mixing the mayonnaise, sour cream and horseradish cream well together. Season with salt and pepper.
Divide the waffles between plates and top with the smoked salmon, a tuft of horseradish mayonnaise and chives.
