Chili con Carne

Ingredients

  • 500 g ground beef
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 1 onion, finely chopped
  • 3 garlic cloves, minced
  • 1 can diced tomatoes (400 g)
  • 1 can kidney beans, drained (400 g)
  • 1 can corn, drained (150 g)
  • 2 tbsp tomato paste
  • 200 ml beef stock
  • 1 tsp paprika
  • 1 tsp cumin
  • 1 tsp chili powder (or more to taste)
  • 1 tsp oregano
  • 1/2 tsp cinnamon (optional)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Optional: fresh cilantro, sour cream, and shredded cheese for garnish

Preparation

Heat the olive oil in a pan and brown the ground beef.
Add the onion and garlic, cooking for 2-3 minutes until translucent.
Stir in the tomato paste and cook for 1 more minute.
Transfer the mixture to the slow cooker, add the bell peppers, diced tomatoes, kidney beans, corn, beef stock, and spices.
Mix well, season with salt and pepper.
Cook on low for 6-8 hours or on high for 3-4 hours.
Taste before serving and adjust seasoning if needed.
Serve with fresh cilantro, a dollop of sour cream, and/or shredded cheese.
Delicious with rice, tortillas, or bread.
