Vegan nuggets

Ingredients

  • About 200 g of cornflakes
  • 1 jar of chickpeas (300 g)
  • 1 egg
  • 2 small teaspoons of oat flour or regular flour
  • 1 tablespoon of olive oil (I use peanut oil)
  • Spices: pepper, salt, paprika powder, curry powder

Preparation

Blend the cornflakes and set them aside.

Rinse the chickpeas and mash them with a fork. Add the egg and all the spices, and mix everything well. Then, add the olive oil and flour and mix again until you get a smooth mixture.

Form nuggets from the mixture and dip them in the cornflakes, then place them into the air fryer. (I lightly grease the air fryer with cooking spray so the nuggets don’t stick.)

Cook for 10-12 minutes at 200°C (392°F) until golden brown and crispy.
