Savoury Dutch mini pancakes with potato and fresh garden herbs

Ingredients

 

  • 550 gr potato
  • 5 eggs
  • 100 gr patent flour
  • 2 tbsp chopped parsley
  • 1 tbsp chopped chives
  • 1 tbsp chopped chervil
  • Pepper and salt

Further needed

Preparation

  • Peel the potatoes and cut them into equal pieces. 
  • Boil the potatoes in salted water until tender. 
  • Drain the potatoes and pass them through a sieve. 
  • Meanwhile, heat the WaffleTastic® with the poffertjes baking tray.
  • Mix 500 gr mashed potatoes with the eggs and flour to a smooth batter. 
  • Stir in the chopped herbs and season with salt and pepper. 
  • Bake this pancake mixture in a preheated WaffleTastic® for 4min. 
  • Turn over after 2min.

Tips

Tip : Serve with grilled tuna and a salad of raspberry, pomegranate and red pepper.

Tip : Serve the Dutch mini pancakes as a snack with carrot or pumpkin hummus.
