Traditional Dutch Doughnuts

Ingredients

  • 600 gm white flour
  • 2,5 dl water
  • 2,5 dl milk
  • 50 gm fresh yeast or 16 gm dried yeast 
  • 2 packets of vanilla sugar
  • 4 eggs 
  • 1 tbsp of sugar

Preparation

  • Dissolve the yeast in the water and add 1 table spoon of sugar. 
  • Put the flour in a bowl and add milk and the water with yeast. 
  • Take your mixer and mix carefully. Then add 4 egg yolks and mix again until you have a smooth and foamy mixture. 
  • Put the egg whites and the vanilla sugar in a bowl and whisk. 
  • Carefully add the egg whites to the mixture. 
  • Let the dough rise for minimum 30 minutes with a moist cloth on top. 
  • Take your FRITEL deep fryer and heat it up to 180°C. 
  • Use a tablespoon to take the dough and use another tablespoon to push the dough off the first spoon into the deep fryer. 
  • Leave the dumplings to fry and turn them so they get nice and brown on both sides. 
  • Let them drip on kitchen paper and serve with lots of icing sugar.
