WaffleTastic® Madeleines with lavender and lemon

Ingredients

2 eggs
150 gr granulated sugar
125 gr unsalted butter (melted and cooled)
1.5 tsp vanilla extract
150 gr flour
Pinch of salt
2 tsp lemon zest
1.5 tsp lavender
Piping bag
Oil, baking butter or baking spray

Preparation

  • Beat the eggs and sugar at high speed for about 5 minutes. 
  • Meanwhile, melt the butter. Pour the melted butter into a bowl to cool more quickly.
  • Finely chop the lavender and mix in a bowl with the flour, salt and lemon zest. Stir everything together well. 
  • Add the vanilla extract to the cooled melted butter.
  • Once the eggs and sugar are fluffy, carefully spat some of the flour and butter mixture into the egg mixture. Repeat until both mixtures are fully incorporated.
  • Fill a piping bag with the batter and let it set for a while in the fridge.
  • Heat the waffle iron and lightly grease the top and bottom with oil, cooking butter or baking spray.
  • Spread the batter on the baking tray and bake the Madeleines for 8-10 minutes on the highest setting until cooked and golden brown.
  • You can serve the Madeleines either cold or warm
