Grilled duck breast with cranberry sauce

Ingredients

  • 4 duck breasts (room temperature)
  • Freshly ground black pepper
  • Coarse sea salt
  • 250 g cranberries (frozen or canned)
  • 100 g sugar
  • ½ tsp ground cinnamon
  • Pinch of ground cloves
  • 200 ml water

Preparation

Pat duck breasts dry with paper towel. Score the skin in a crisscross pattern. Season with pepper and salt.

Place skin-side down on the grill for 5 minutes, then flip and grill another 2 minutes.

Remove from grill, cover with foil, and let rest for 5 minutes.

Cranberry sauce:

Combine all ingredients in a saucepan. Bring to a boil, stirring often.

Once the cranberries burst, remove from heat and stir for another minute.

Blend until smooth and strain if you prefer a silky sauce.

 

Slice duck thinly and drizzle with cranberry sauce.

Tips

Great with green beans and bacon, caramelized endive, or celery root purée.
