Slice the chicken fillets open lengthwise.
Fold the bacon slices in half and place one in each chicken fillet.
Roll up the chicken fillets and tie them closed.
Preheat the air fryer to 180°C.
Brush the chicken rolls with some oil and bake for 15–20 minutes until golden brown and cooked through.
Meanwhile, fry the mushrooms in a pan with a little oil until golden and the moisture has evaporated.
Add the port and let it reduce briefly.
Stir in the veal stock and cream.
Let the sauce simmer gently for a few minutes until slightly thickened.
Season with salt and pepper to taste.
Spoon the sauce over the chicken rolls and finish with the fried mushrooms and a bit of fresh parsley.
Place the chicken supremes on a bed of creamy mashed potatoes for a beautiful presentation and extra comfort food factor. Also delicious with steamed vegetables or a fresh salad.
