WaffleTastic® Small pancakes with icing sugar

Ingredients

Small pancakes

200 g pastry flour (sifted)

15 g fresh yeast

400 ml lukewarm milk (lukewarm= +/- 30°C)

2 g salt

5 g sugar

1,5 teaspoon dried yeast

1 egg

50 gr melted butter 

Topping

icing sugar

Extra

Oil or baking spray

Preparation

  • Dissolve the yeast in the lukewarm milk.
  • Put the flour in a mixing bowl and make a well in the middle. Sprinkle the salt and sugar around the well.
  • Pour some of the yeast mixture into the well and whisk to a smooth batter.
  • Add the egg and then gradually mix the remaining yeast mixture into the batter. 
  • Stir in the melted butter and mix well.
  • Cover the bowl with a damp cloth and let the batter rest for 10 minutes.
  • Heat your FRITEL waffle maker with the baking plates for small pancakes/blinis and lightly grease the top and bottom with oil, cooking butter or baking spray.
  • Fill a piping bag  with the batter and fill the 15 cavities of the baking tray.
  • Close the waffle maker and bake for about 3 minutes until golden brown.
  • Serve them warm, sprinkled with icing sugar.
