Pumpkin muffins



450 gm of cooked pumpkin in cubes and pureed to puree -100 gm apple sauce with no added sugar
100 gm of sugar
2-3 tbsp of maple syrup
300 gm of wholemeal spelt flour
150 ml of soy milk or other (vegetable) milk
2 tbsp olive oil
2,5 tsp pumpkin or cookie spices
1,5 tsp baking powder
A pinch of salt
50 gm of pecan nuts, roughly chopped
Pumpkin and sunflower seed mix


1. Pre-heat the SnackTastic® to 180 °C.
2. Mix the pumpkin puree with the apple sauce and milk. Then stir in the flour and mix well. Then stir the rest of the ingredients into the batter except for the seed mix.
3. Divide the batter between the muffin tins and garnish with some seeds.
4. Bake the muffins in the SnackTastic® for 45-50 minutes and check with a skewer if they are done.
