Shrimp croquettes

Ingredients

100 gm grated cheese
250 gm grey shrimps
4 egg whites
80 gm flour
80 gm butter
50cl water
25 cl milk
1 fish stock cube
breadcrumbs
extra flour
nutmeg and pepper
Optionally: tomato puree (for colour only)

Preparation

Make a roux with the butter and the flour. Melt the butter in a pan and make sure the butter does not change colour. Turn the heat down a little and add the sieved flour. Mix the mixture with a spatula. Leave the sauce to dry on a low fire. Keep stirring and make sure it does not change colour. Remove the pan from the stove. In another pan, boil some water and add the fish stock. Then add the milk and season to taste with pepper and nutmeg. Mix this in with the roux and leave it to thicken until you have a nice thick smooth paste. Leave to boil while stirring all the time. Then add half a tea spoon of tomato puree...
Take the pan from the fire, add the grated cheese and then mix the shrimps. Put the mixture in a buttered dish in a +/- 2 cm thick layer.
Leave the mixture to cool down in the refrigerator and then cut it into squares or rectangles.
Roll the croquettes through the flour, through the egg whites and finally through the breadcrumbs. Repeat the egg whites and breadcrumbs to obtain a crispy crust.
You best leave the croquettes to rest for one hour in the refrigerator.
Turn your FRITEL fryer to 180°C. When the appliance has reached the requested temperature, put the croquettes in the basket, only on the bottom (do not pile up). Insert the basket in the oil, do not lift the basket and shake too often! When the croquettes come floating to the surface and have a light brown colour, they are ready.

Tips

Serve with lemon and fried parsley.
