Chicory with ham and cheese in a raclette pan

Ingredients

  • Chicory (Belgian endives)
  • Cooked ham, diced
  • Cheese sauce
  • Grated cheese
  • Nutmeg
  • Salt and pepper

Preparation

Cut the chicory into cubes of about 1 cm or use whole mini-chicory.

Caramelize the chicory in a pan, seasoning with salt, pepper and nutmeg.

Dice the cooked ham (slightly larger than the chicory pieces).

Mix the chicory and ham together.

Prepare a classic cheese sauce.

Keep the mixture and/or the sauce warm on a FRITEL warming plate.

In the raclette pans:

Place some chicory-ham mixture in the raclette pan.

Pour over cheese sauce and sprinkle with grated cheese.

Let it gratinate beautifully under the raclette grill until golden and bubbly.

Tips

Use smoked ham for a richer, deeper flavor!
