Empty the fridge waffle

Ingredients

  • 1 zucchini (or vegetables you still have in the fridge — e.g. carrot, bell pepper, spinach, leek…)
  • 100 g grated cheese (whatever you have: Emmental, mozzarella, cheddar…)
  • 2 eggs
  • 100 g flour
  • 1 tsp baking powder
  • Pepper, salt and herbs to taste (dill, chives, oregano…)

     

  • Greek yogurt or sour cream
  • Fresh herbs
  • Pumpkin seeds or other seeds for extra crunch

Preparation

Grate the zucchini or any other vegetables you still have in the fridge.
Squeeze out the excess moisture using your hands or a kitchen towel.
Mix the flour and baking powder in a bowl.
Add the eggs and whisk everything well.
Stir the grated vegetables, cheese and herbs into the batter.
Season with salt and pepper.
Preheat your waffle iron and lightly grease the plates.
Spoon the batter onto the plates.
Bake the waffles until golden and crispy (about 5 minutes).
Serve the warm waffles with yogurt or sour cream, fresh herbs and pumpkin seeds.
