Halve the bell peppers lengthwise and remove the seeds. Leave the stem on for presentation.
Heat a splash of olive oil in a pan and sauté the onion until translucent.
Add the garlic and fry for another 30 seconds.
Add the ground beef and cook until browned, about 4 to 5 minutes.
Stir in the carrot, diced tomato and tomato paste. Let it simmer for 5 minutes on low heat.
Season with Italian herbs, salt and pepper. Mix well.
Fill the pepper halves with the meat mixture.
Generously sprinkle with grated cheese.
Place the stuffed peppers in the airfryer. Work in two batches if needed.
Bake for 10 to 12 minutes at 180°C, until the cheese is melted and the peppers are soft.
Garnish with fresh parsley and serve warm.
