Beignets

Ingredients

600 gm white flour
2,5 dl water
2,5 dl milk
50 gm fresh yeast or 16 gm dry yeast
2 packets of vanilla sugar
4 eggs
1 tbsp sugar

Preparation

Dissolve the yeast in water and add 1 tablespoon of sugar.
Put the flour in a bowl and add the milk and water with the yeast.
Take your FRITEL hand blender and mix well. Add 4 egg yellows and mix again until its smooth and fluffy.
Put the egg whites with the vanilla sugar in a bowl and beat until stiff.
Add the egg whites to the mixture and mix gently underneath.
Lift the dough for 30 min. in a damp cloth
Take your FRITEL deep fryer and reheat to 180°C.
Use one tablespoon to pick up the dough and use another to let the dough slide into the deep fryer.
Let the doughnuts cook for a while and turn them so that they can brown on both sides.
Drain on paper towel and serve generously sprinkled with powdered Sugar.
