Brussels waffles (4x6)

Ingredients

25 gm fresh yeast
5 dl lukewarm milk
5 dl lukewarm sparkling water
4 egg yolks
4 egg whites
600 gm pastry flour
200 gm melted butter
pinch of salt

Preparation

Take your fresh yeast and mix it with the milk and the water. Beat in a separate bowl the egg yolks frothy with the FRITEL hand blender and add these to the yeast mixture. Then add the pastry flour and whisk the mixture with the FRITEL combi mixer until it is light. Whisk the egg whites firmly with the FRITEL hand blender and carefully fold through the dough to keep the dough airy. Add the melted butter and a pinch of salt. Mix again. Cover the dough with a moist towel and leave it to rest for at least an hour at room temperature. Take your FRITEL Combi Waffle maker, insert the 4x6 baking plates for waffles, especially for Brussels waffles and preheat the appliance. Fill the lower baking plate entirely with dough, the upper plate will fill with dough once this will have risen. Depending on the dough you have prepared and on your personal taste, you will have to choose the correct temperature setting. This will also influence the baking time.

Tips

Make sure your ingredients are at room temperature. Before you start baking it is advisable to grease the baking plates with a little bit of oil, even if they are covered with a non-stick coating. To avoid lumps in your dough, it is better to sieve the flour before use. Do not use the flipover of the appliance, this could cause wholes in your waffle. Use the FRITEL waffle fork to remove the waffles easily from the appliance. Let the waffles cool down on a grid. Serve the Brussels waffle with fresh strawberries and freshly whipped cream.
