Syrup waffles

Ingredients dough
500 gm pastry flour (sieved)
25 gm fresh yeast
250 gm butter (melted)
100 gm candysyrup
50 gm fine sugar
250 ml full cream milk (lukewarm = +/- 30°C)
1 egg
Pinch of salt
Ingredients syrup
100 gm candysyrup
125 gm fine sugar
50 gm liquid honey
100 gm butter
10 ml water

Separate the egg yolks from the egg whites
Dissolve the fresh yeast in the lukewarm milk.
Put the flour in a bowl and make a pit in the middle. Add the salt.
Pour the yeast mixture in the pit together with the sugar, the candy syrup, the melted butter and the egg yolk. Knead the dough by hand until it doesnt stick to your hands anymore and let it rise until it doubled in volume (+/- 30 to 45 minutes in an oven at 40°C - put a cloth over the bowl)
In the meantime, make the syrup. Add all the ingredients in a saucepan, bring to the boil while stirring and then let it cool down.
Then make some small balls of dough (+/- 20 gr).
Take your FRITELWaffle Maker with baking plates for waffles 16x28, turn to thermostat position 6 and heat up your Waffle Maker.
Insert the dough in the Waffle Maker, close the Waffle Maker and bake for +/- 25 sec.
Remove the waffles with the FRITEL waffle fork and cut them horizontally. Spread with syrup and close again.
