Stuffed waffle with apricot

Ingredients

  • 250 g flour
  • 50 g sugar
  • 1 packet vanilla sugar
  • 2 eggs
  • 100 g melted butter
  • 300 ml milk
  • 1 pinch of salt
  • 150 g apricot jam (preferably with pieces)
  • Optional: thin slices of dried apricots

Preparation

Mix the flour, sugar, vanilla sugar, and salt in a bowl.
Add the eggs and briefly whisk.
Gradually add the milk while continuing to whisk until you get a smooth batter.
Stir in the melted butter.
Let the batter rest for 10 minutes while you preheat your FRITEL waffle maker with filled-waffle plates.
Lightly grease the waffle plates with a little oil or baking spray.
Spoon a tablespoon of batter into the center of the bottom plate.
Add a teaspoon of apricot jam (optionally with some extra dried apricots).
Add a little more batter on top of the jam, just enough to cover the filling.
Close the waffle maker and bake the waffles golden brown for about 4 to 6 minutes.
