Wild Boar Stew with Blueberries and Celeriac Mousseline

Ingredients

For the marinade
0.5 dl balsamic vinegar
0.5 dl orange juice
1 dl olive oil
1 tbsp mustard
7 sprigs fresh thyme
1 tsp cinnamon
2 tbsp freshly ground pepper


For the wild boar stew
600 g wild boar fillet, cut into small pieces
4 shallots
4 celery stalks
4 carrots
300 g blueberries
300 ml game stock
300 ml red wine
25 g butter
25 ml crème de cassis
2 tbsp blueberry jam
2 bay leaves
2 cinnamon sticks
4 cloves


For the celeriac mousseline
celeriac
1 dl cream
nutmeg
pepper
salt


Freshly prepared potato croquettes
2 kg floury potatoes
4 egg yolks
4 egg whites
breadcrumbs
flour
knob of butter
pepper, salt, nutmeg

Preparation

Marinade
Mix the ingredients for the marinade and pour it over the pieces of wild boar fillet. Cover and let marinate for 1 day in a cool place.
Wild boar stew
Scoop the pieces of wild boar fillet out of the marinade, pat them dry היט kitchen paper, and keep the marinade.
Take a heavy-bottomed pot, melt some butter, and sear the pieces of wild boar fillet.
In a separate saucepan, heat the game stock, finely chopped shallots, and red wine with half of the marinade. Pour this over the wild boar pieces. Bring everything to a boil, then add the blueberry jam, bay leaves, cinnamon, and cloves, and let it simmer gently with the lid on for 50 minutes.
Finely chop the celery and carrots and stir them, together with the blueberries, into the stew 15 minutes before the end.
Just before serving, add the crème de cassis and season with salt and freshly ground pepper.
Celeriac mousseline
Cut the celeriac into pieces and cook for about 20–30 min. until done in salted water. Drain.
Separately reduce the cream with pepper, salt, and nutmeg.
Fill the FRITEL blender with the celeriac and the reduced cream.
Blend into a smooth mousseline.
Freshly prepared potato croquettes
Peel the potatoes and cut them into equal pieces. Cook the potatoes until just done and drain them.
Mash the potatoes with a potato masher, or pass them through a food mill (passe-vite).
Season with pepper, salt, and nutmeg. Mix in a knob of butter and the egg yolks.
Take a baking tray or large dish and pipe the mash with a piping bag fitted with a large nozzle into long strips over the full length of the tray or dish (or use a croquette machine).
Let the croquettes cool in the refrigerator and then cut them into pieces of 4 to 5 cm.
Dip the croquettes in the beaten egg whites, then in the breadcrumbs. Dip them a second time in the egg whites and breadcrumbs for an extra crispy crust.
It is best to let the croquettes rest in the refrigerator for another hour.
Set your FRITEL deep fryer to 180°C. Once the appliance has reached temperature, only fill the bottom of the basket (do not stack them). Do not keep lifting and shaking the basket of croquettes constantly. When the croquettes float to the surface and have a light brown crust, they are ready.

Tips

Always start white vegetables in cold water to preserve their white color.
Do not use an electric mixer/whisk to mash the potatoes, as this will result in a sticky mass.
