Breakfast Quesadilla (bacon/egg/cheese)
Ingredients
6 eggs
12 strips of bacon
200 g grated cheese
Pepper and salt
4 large tortillas
Oil on baking spray

Preparation
Start by baking the bacon.
Next, remove the bacon from the pan and start frying your scrambled eggs. Break the eggs into the pan, season with salt and pepper and stir until your eggs are nicely set. When these are baked to your liking, remove the pan from the heat.
Heat the waffle iron and lightly brush or spray the top and bottom with oil.
Place the tortilla on your plate and cover half with egg, 3 strips of fried bacon and grated cheese.
Fold the tortilla closed and when your waffle iron is hot place two tortillas in between. Bake the tortillas until golden brown and serve hot.
Tips
Top with sour cream and fresh chives if desired
