Soup of courgette, cucumber and parsnip with crispy bacon bits

Ingredients

  • Half a courgette (cut into pieces)
  • Half a cucumber (cut into pieces)
  • 1 parsnip (peeled and cut into pieces)
  • 1 onion (peeled, cut into pieces)
  • 1 vegetable stock cube 
  • 1 litre of water
  • 100 grams of bacon strips
  • Pepper and salt

Preparation

  • Put all the vegetables, the stock cube and water in the soupmaker. Choose the creamy setting.
  • Meanwhile, fry the bacon in a pan without fat. Dab off with kitchen paper.
  • Season the soup with salt and pepper.
  • Pour the soup into bowls and finish with bacon as a topping.
