Pumpkin soup from the Slow Cooker

Ingredients

  • 1 kg pumpkin (peeled and diced)
  • 2 carrots, chopped
  • 1 onion (roughly chopped)
  • 2 garlic cloves (finely chopped)
  • 750 ml vegetable stock
  • 100 ml cream
  • 1 teaspoon ground cumin
  • ½ teaspoon cinnamon
  • Salt and pepper
  • Olive oil or butter
  • Parsley

Preparation

Heat oil or butter.
Sauté the onion and garlic until soft.
Add the onion, garlic, pumpkin, stock, cumin and cinnamon to the Slow Cooker.
Fill the Slow Cooker up to ¾ full.
Set the Slow Cooker to high for 3–4 hours (or low for 6–7 hours).
Blend the soup until smooth using an immersion blender or regular blender.
Stir in the cream and season with salt and pepper.
Serve warm and garnish with some finely chopped parsley.
