Blinis:
125 gr buckwheat flour
75 gr flour
5 gr dried yeast
½ tsp salt
250 ml lukewarm milk
2 eggs
Topping :
125 gr sour cream
200 gr smoked salmon
Fresh dill and/or chives
Black pepper

Put the buckwheat flour, flour, yeast and salt in a bowl and mix. Add the milk and egg yolks and beat to a smooth batter. Let the batter rise, covered, in a warm place for 1 hour.
Split the eggs and beat the egg whites until stiff. Then carefully add them to the batter.
Heat the waffle maker and lightly brush or spray the baking plates with oil.
Spread the batter over the blini baking plate and bake on the setting 4 to 5 until golden brown.
Let them cool briefly and then top with the sour cream, smoked salmon, black pepper and fresh herbs.
