WaffleTastic® Madeleines with lavender and lemon

Ingredients

- 2 eggs
- 150 gr granulated sugar
- 125 gr unsalted butter (melted and cooled)
- 1.5 tsp vanilla extract
- 150 gr flour
- Pinch of salt
- 2 tsp lemon zest
- 1.5 tsp lavender
- Piping bag
- Oil, baking butter or baking spray

Preparation

Beat the eggs and sugar very lightly for about 5 minutes on high speed.

While doing so, melt the butter. Once melted pour it into a cup or bowl so it cools faster.

Finely chop the lavender and put it together in a bowl with the flour, salt and lemon zest and stir everything together.

Add vanilla extract to the melted butter.

The eggs and sugar are now fluffy. Grab a spatula and add some of the flour and butter mixture. Gently spatula this in. Continue until both mixtures are added in their entirety.

Fill a piping bag with the batter and put it in the fridge for a while to make it a little firmer.

Heat the waffle maker and lightly brush or spray the top and bottom with oil, cooking butter or baking spray.

Spread the batter over the madeleine baking plates and bake the madeleines for 5-8 minutes on the highest setting until cooked and golden brown.

You can serve the madeleines either cold or warm.
