Vegetarian Barbecue Skewers with Halloumi

Ingredients

• 200 grams halloumi
• 1/2 red bell pepper
• 1/2 zucchini
• 3 sprigs of basil
• 3 sprigs of parsley
• 2 sprigs of mint
• 1 lime
• Olive oil
• Pepper and salt

Preparation

• Cut the halloumi, bell pepper, and zucchini into 8 cubes each. Thread them alternately onto 4 skewers.
• Drizzle with olive oil, pepper, and salt, and grill on all sides.
• Meanwhile, puree the (picked) herbs with a few tablespoons of olive oil to make a green oil. Season with pepper, salt, lime juice, and zest.
• Serve the skewers warm with the green herb oil drizzled on top.
